Sweet Potato Biscuits
2 1/2 cups all purpose flour 1/2 cup packed brown sugar 1 Tsp baking powder 3/4 tsp salt 3/4 tsp ground cinnamon 3/4 tsp ground ginger 1/4 tsp allspice 1/2 cup vegetable shortening 1/2 cup chopped pecans 3/4 cups mashed can sweet potatoes* 1/2 cup milk Preheat oven to 450 Combine flour, sugar, baking powder, salt, cinnamon, ginger & allspice in med bowl Cut shortening with pastry blender or 2 knives until mixture resembles coarse crumbs Stir in pecans Combine sweet potatoes & milk in separate med bowl with wire whisk until smooth Make well in center of dry ingredients Add sweet potato mixture; stir until mixture forms soft dough that clings together & forms a ball Turn out dough onto well floured surface Knead dough gently 10 to 12 times Roll or pat dough to 1/2 in thickness Cut dough with floured 2 1/2 in biscuit cutter Place biscuits 2 in apart on ungreased lge baking sheet Bake 12 to 14 mins or until tops & bottom are golden brown Ylds 12 biscuits Note* I use fresh sweet potatoes |
